INGREDIENTS
Soup
  • 4 large Tomatoes (halved and seeded)
  • 1 medium Sweet Bell Pepper (halved and seeded)
  • 1/2 medium Sweet Onion (cut into 1/2 inch pieces)
  • 1 15 oz can Fire Roasted Diced Tomatoes
  • 1-2 tsp Coconut Oil (melted)
  • 1 cup Vegetable Broth
  • 1 tbsp Dried Basil
  • 1 tbsp Italian Seasoning
  • 2 tsp Himalayan Salt
  • 1/4 tsp Red Pepper Flakes
Grilled Cheese
  • 8 slices Ezekiel Bread
  • 1 cup Fresh Shredded Cheese (I prefer cheddar)

INSTRUCTIONS
Soup
  1. Preheat oven to 450. Line two baking sheets with foil and place tomatoes face down on one and onions and peppers face down in the other.
  2. Drizzle coconut oil on vegetables.
  3. Roast onions and peppers for 20 minutes. Enclose them with foil and let stand 10-15 minutes. Pull off charred skin from peppers.
  4. Preheat broiler on high and place tomatoes on top rack for 5 minutes.
  5. In a blender (and you may need to do 2 batches), combined peppers, tomatoes, onions, canned tomatoes, seasoning, and broth and blend until smooth.
Grilled Cheese
  1. Sprinkle cheese in between two slices of bread and grill over medium heat until browned and crispy.
  2. Don't forget!!! Cut your grill cheese in triangles , dip, and ENJOY!
