Ahhhhh… I could eat this with breakfast, lunch and dinner! I LOVE sweet potatoes and one of my favorite ways to cook them up is with a little onion and seasoning and VIOLA you have sweet potato hash FITsSimple style! With less than 5 ingredients, I know there are very few of us that could mess this one up!
Sweet Potato Hash
- 2 Medium Sweet Potato
- 1/2 Medium Sweet White Onion (quartered and sliced thinly)
- 2 Cloves of Garlic
- 2 tsp Coconut Oil (melted)
- Salt & Pepper (to taste)
- Preheat oven to 400. Wash and peel sweet potatoes (you can leave the skin on if you'd like). Cut into 1 inch pieces and place in medium sized mixing bowl. Quarter and thinly slice onion and put in bowl. Toss with crushed garlic cloves, coconut oil, and salt & pepper.
- Lay all ingredients out flat on a baking sheet lined with aluminum foil. Bake for 10-15 minutes and flip/rotate pieces to avoid burning. Bake another 10 minutes until tender and golden brown.
- 1 yellow - Sweet Potato
- 1/4 green - Onion
- 1/2 tsp - Coconut Oil
