Sweet Potato Hash

Ahhhhh… I could eat this with breakfast, lunch and dinner!  I LOVE sweet potatoes and one of my favorite ways to cook them up is with a little onion and seasoning and VIOLA you have sweet potato hash FITsSimple style!  With less than 5 ingredients, I know there are very few of us that could mess this one up!

Ingredients
  1. 2 Medium Sweet Potato
  2. 1/2 Medium Sweet White Onion (quartered and sliced thinly)
  3. 2 Cloves of Garlic
  4. 2 tsp Coconut Oil (melted)
  5. Salt & Pepper (to taste)
Instructions
  1. Preheat oven to 400. Wash and peel sweet potatoes (you can leave the skin on if you'd like). Cut into 1 inch pieces and place in medium sized mixing bowl. Quarter and thinly slice onion and put in bowl. Toss with crushed garlic cloves, coconut oil, and salt & pepper.
  2. Lay all ingredients out flat on a baking sheet lined with aluminum foil. Bake for 10-15 minutes and flip/rotate pieces to avoid burning. Bake another 10 minutes until tender and golden brown.
  3. Enjoy!

  1. It looks to be 4 servings, as 1 small sweet potato usually fills a yellow (and this calls for 2 medium). If there are 2 tsp coconut oil and it says it counts as 1/2 tsp serving, this again would lead me to believe there are 4 servings total.
