One of my favorite quinoa salad dishes that can be served for lunch, dinner, a snack or even a side dish.  It’s so refreshing, light and healthy that you have to give it a try!

Ingredients
  1. 1 Yellow - Cooked Tri-Colored Quinoa
  2. 1 Blue - Avocado
  3. 1 Green - Cherry Tomato & Cucumbers
  4. 1 tsp - Extra Virgin Olive Oil
  5. FREEBIES - Lemon Juice and White Wine Vinegar
Instructions
  1. Combine quinoa, avocado, tomato and cucumbers and top with dressing (as desired).

DRESSING

  1. 1 tsp Extra Virgin Olive Oil
  2. 1 tsp Lemon Juice
  3. 1 tsp White Wine Vinegar

  1. Excelent salad with dressing. Will make again. Made quino in advance and just add dressing, cucumbers and tomatoes.
