One of my favorite quinoa salad dishes that can be served for lunch, dinner, a snack or even a side dish.  It’s so refreshing, light and healthy that you have to give it a try!

INGREDIENTS
Salad
  • 1/3 cup Tri-Colored Quinoa (cooked; per instructions)
  • 1/2 medium Avocado (chopped)
  • 5-6 small Cherry Tomatoes (halved)
  • 1/2 medium Cucumber (chopped)
Dressing
  • 1 tsp Extra Virgin Olive Oil
  • 1 tsp Lemon Juice
  • 1 tsp FREE - Fresh Squeezed Lemon Juice & White Wine Vinegar
  • Salt & Pepper (optional; to taste)

INSTRUCTIONS
  1. Combine quinoa, avocado, tomato and cucumbers and top with dressing (as desired).
