I will be honest, when my husband said he was making dinner one night I was a little worried. Not that he isn't a good cook because he definitely is but because I have been cooking all our "clean" meals for quite some time. I wasn't sure what he would come up with ... man was I pleasantly surprised!

  1. 1 lb Lean Ground Turkey Meat
  2. 1/2 Medium Onion, chopped
  3. 4 Green Onions, chopped
  4. 5 Snacking Peppers, yellow & orange preferred, chopped
  5. 3 cloves garlic, crushed
  6. 1 Tbsp Extra Virgin Olive Oil
  7. 1 tsp Chili Powder
  8. Salt & Pepper (to taste)
  9. 2 cups Brown Rice, cooked
  10. Head of Iceberg or Green Leaf Lettuce, washed and prepped in whole pieces
  11. 2 Tbsp Fresh Parsley, chopped (optional)


  1. 1 tsp Sesame Oil
  2. 2 tsp White Vinegar
  3. 2 tsp Soy Sauce
  4. 1 tsp Fresh Lime Juice
  5. 1/2 tsp Honey
  6. Dash of Ginger
  7. Mix together and use as a dressing/sauce on top.
  1. Heat oil in a large skillet over medium high heat. Add the chopped onions, green onions and bell pepper and cook until tender, 2-3 minutes. Add crushed garlic.
  2. Brown the turkey meat in another pan over medium heat. Once browned, stir in the onions and peppers. Add chili powder, salt and pepper and remove from heat. Stir in fresh chopped parsley and serve with brown rice.
  3. Wrap all ingredients in lettuce.
  4. ENJOY!!

    • Brooke – This should be 4 healthy servings. Measure out your red container worth of turkey and then your lettuce wraps per your plan.

    • Luticia – You are correct. Technically soy sauce isn’t in the freebie list so I played by the rules and excluded it. Doesn’t mean you can’t have it in moderation and count it as a tsp since there is oil. I’m all about flexibility.

  1. Sorry so confused Am I measuring out 1 red, 11/2 green, and a yellow? this seems like to much? and if you do it like this you are not actually getting the whole amounts of what each container holds. Sorry to sound dumb but I am so confused.

    • That is correct. The turkey is a red (you would measure that out. The Pepper, Onion, and Lettuce are 1.5 green. The rice is a yellow.
