Open Faced Eggs & Spinach Sandwich
Do you love eggs? Love toast? Why not put them together and serve up a simple and quick open faced eggs & spinach sandwich???

- 1 Red - Eggs
- 1 Green - Spinach
- 1 Yellow - Whole Wheat Toast
- 1 tsp - Extra Virgin Olive Oil
- Sauté spinach with 1/2 tsp of oil until wilted. Set aside. Cook eggs in 1/2 tsp of oil until desired yolk consistency is obtained.
- Serve over whole wheat toast.
