No Bake Energy Bites

When I completed the Ultimate Reset I was just about ready to start peaking with mileage for my 3rd marathon in 2013. At the time, I had no idea what artificial ingredients would do to me after doing the cleanse UNTIL I ate an entire sleeve of Clif Bloks. I was NOT in good shape. So, after seeing my sister create an energy bite with nuts, I thought I would try my hand at something a little more smooth to pop in before a run or even during if it was something that I could just grab and put in my camel bag. Low and behold... the peanut butter coconut ball was created!

Ingredients
  1. 1 cup oatmeal
  2. 1/3 cup PB2 (prepared with water)
  3. 1/3 cup honey
  4. 2/3 cup coconut flakes
  5. 1/2 cup ground flaxseed
  6. 1 tsp vanilla
  7. (OPTIONAL) - 1/3 cup mini dark chocolate chips, cranberries or raisins or all three
Instructions
  1. Mix everything above in a medium bowl until all is mixed together. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
Notes
  1. These are not to be consumed in bulk. They are actually high in sugar but quite delicious for a pre-race fuel shot or even to take care of a nasty sweet tooth. Again, consume in moderation!

    • Carolyn – It is Powdered Peanut Butter. You mix with water (or i put it in my shake) and its a PB alternative.
