I remember driving through Taco Bell and ordering Mexican Pizza ALL.THE.TIME!   It was that or double deckers.  And before you say it… YES, I ate Taco Bell.  I also ate Burger King and Lean Cuisines all day long too.  It took a few years to transform my eating habits and a few more after that to really start eating clean and wholesome foods.  But, alas… it HAPPENED!  And now I get to share recipes like this with all of you.  I hope you enjoy this one as much as we do since it was kid tested and husband approved!

Ingredients
  1. 1 lb Lean Group Turkey Meat
  2. 3/4 cup Sweet Pepper (chopped)
  3. 1/2 cup Onion (chopped)
  4. 6 Garlic Cloves (minced)
  5. 1/2 cup Tomato Sauce
  6. 1/2 cup Shoepeg Corn
  7. 2 Tbsp Taco Seasoning
  8. 8 Corn Tortillas
  9. Optional: Cheese
Instructions
  1. In a large skillet, brown ground turkey, sweet pepper, onion, and garlic over medium heat until cooked thoroughly. Drain fat.
  2. Stir in tomato sauce, corn, and taco seasoning. Cook until heated through, stirring occasionally.
  3. Toast 2 corn tortilla over medium heat and add meat inside. Serve with Salsa & Guacamole. Top with cheese (optional)
  4. ENJOY!
