INGREDIENTS
  • 3 oz. Grilled Chicken Breast
  • 1/3 cup Quinoa
  • 1 Tbsp Sun-dried Tomatoes (soaked in warm water for 15 minutes)
  • 1 tsp Pesto
  • 1 cup Baby Spinach (chopped)
  • 1 Tbsp Feta Cheese

INSTRUCTIONS
  1. Cook quinoa per instructions. Set aside.
  2. While quinoa is cooking, chop sun-dried tomatoes.
  3. Chop spinach and layer with sliced chicken breast, quinoa, pesto, and sun-dried tomatoes.
  4. Top with Feta cheese and ENJOY!
