INGREDIENTS
  • 2 large Eggs
  • 1/2 cup Spinach
  • 1 small Tomato (sliced)
  • 1 piece Whole Wheat Toast
  • 1 tsp EVOO
  • Salt (optional; to taste)

INSTRUCTIONS
  1. Sautee spinach and tomatoes in EVOO over medium heat.
  2. Crack and whisk eggs. Pour eggs in skillet with spinach and tomatoes. Cook evenly and flipping as needed.
  3. Serve with toast and ENJOY!
