INGREDIENTS
Main Ingredients
  • 2 Hard Boiled Eggs
  • 1 Medium Tomato
Dressing
  • 1/2 Cup 0% Plain Greek Yogurt
  • 3 Tbsp Dijon Mustard
  • 3 Tbsp Raw Honey
  • 3 Tbsp Rice Vinegar
  • 1/2 Cup EVOO
  • Dash Himalayan Salt optional

INSTRUCTIONS
  1. Wisk all dressing ingredients together. 
  2. Remove yolk and chop egg whites. Mash yolk in a separate bowl. Combine egg whites with mashed yolk. Stir in 1 TBSP of dressing. Gut medium tomato. Fill tomato with egg salad. Garnish with fresh herbs.  NOTE:  If you want a kick, add red pepper flakes. 
  3. Eat & Enjoy!
