Oh my… you know that homemade salsa recipe I posted?? Well, get ready to use that in this Clean Chicken Tortilla Soup recipe. I gave it a shot and boy was it FANTASTIC!
INGREDIENTS
- 3 cups Low Sodium Chicken Broth
- 2 cups Shredded Chicken Breast (cooked)
- 1 cup Homemade Mild Salsa
- 1/2 cup White Shoepeg Corn
- 1/2 cup Pinto Beans
- 1/2 cup Light Red Kidney Beans
Tortilla Strips
- 2 Corn Tortillas (6 inches cut into strips)
- Salt (optional; to taste)
- Cilantro (optional; to taste)

INSTRUCTIONS
Soup
- Combine Chicken Broth and Homemade Mild Salsa in a medium saucepan over medium-high heat and bring to a boil. Add cooked shredded chicken meat, corn, and beans. Reduce heat and simmer for 15 minutes.
Tortilla Strips
- In a medium saute pan, toast tortilla strips and lightly salt. Serve with soup and top with cilantro!
RECIPE NOTES
21 Day Fix Container Equivalents (2 cups):
Red = Chicken
Green = Broth
Yellow = Beans, Corn, and Tortilla
Purple = Salsa
Very good. Simple enough to do after work. I also added a little cumin for a more taco flavor. I would also have added a little dollop of my plain yogurt if I had any left!
Does each container count for one of each color?
So your saying the 2 cups of soup equals 1 red, 1 green, 1 yellow and 1 purple.

Elizabeth – I just grill it with a little salt and garlic pepper. Keep it simple for these recipes because the flavor will come out with the ingredients in the soup. 🙂 ENJOY!
