Clean Chicken Salad

Clean Chicken SaladI have to be one of the pickiest chicken salad eaters out there.  In the past, it couldn’t have too much or too little mayo, it couldn’t have celery, I preferred it was some fruit to make it a little sweeter but still savory, not to much salt but enough to bring out flavor, etc.  I got so picky I just stopped purchasing it and certainly never attempted making it myself. Pfftttt.  That’s was just crazy! 

Well, now is a different story.  I’ve been trying a few different clean chicken salad recipes since then and was still somewhat unimpressed.  So, I came up with one on my own that I believe is quite tasty and just right.  I hope you feel the same way!  

Clean Chicken Salad

Ingredients
  1. 2-3 Grilled Chicken Tenderloins (cooked and either chopped or shredded)
  2. 1/3 cup Plain Greek Yogurt (I use 0% Fage)
  3. 1/2 Small Green Apple ( chopped in small chunks)
  4. 1 Tbsp of Crushed Walnuts
  5. 1 tsp Pepper
  6. 1 tsp Garlic Powder
  7. 2 tsp lemon juice
  8. Optional: Himalayan Salt
  9. Optional: 2 Tbsp chopped avocado
Instructions
  1. Combine and mix all ingredients in a medium bowl. Serve on whole wheat or whole grain bread or wrap in lettuce. Top with avocado chunks.
21 Day Fix Container Equivalents (for 1 serving)
  1. 1.5 red = chicken & yogurt
  2. 1 green = lettuce (if doing lettuce wraps)
  3. 1 yellow = slice of toast or pita pocket (if not using lettuce wraps)
  4. .5 purple = apple
  5. .5 blue = walnuts
  6. .5 blue = avocado
  7. 1 tsp = oil (for grilling chicken)

  1. LOVE THE CLEAN CHICKEN SALAD RECIPE. HAVEN’T TRIED IT YET. BUT WANTED TO KNOW IF I ADD AVOCADO AND CRANBERRIES, HOW WOULD THAT CHANGE THE ESSENCE OF THE 21 DF? THX FOR YOUR QUICK RESPONSE.

      Yes. Avocado would be a blue container and cranberries (if fresh) would be purple but only a portion of a purple.

    I was under the impression that I was not allowed any salt in the 21 day fix plan?? But all of the seasonings I see on pinterest have salt in it.

    • Michelle – Technically dried cranberries aren’t approved. They are typically high in sugars and likely a “treat”.

  3. I was wondering the same thing about dried cranberries. There is nothing listed in the handbook. I read some posts that agree with you…the dried cranberries should be measured in the orange container as a Zing. In other words, it is a Yellow replacement…a treat Zing. If anyone knows for sure please post! Also…I love to cook & created a similar chicken salad. Mine includes a splash of sriracha, a tsp of dijon mustard & a tsp of finely minced red onion.
